Strawberry-Balsamic Vinaigrette

Half Day Cafe

 

1/2 cup      Strawberries

1/4 cup      Balsamic vinegar

3/4 cup      Vegetable oil

1   teasp.   Brown sugar

             Salt & pepper to taste

 

Combine all ingredients in blender or food processer until strawberries are completely broken down.

 

 

 

Strawberry-Mango Smoothie

2 cups   Strawberries

2 cups   Fresh mango

2 cups   Apple juice

2 cups   Ice cubes

2 Tblsp  Honey

 

Combine all ingredients in a blender until ice has all broken down.

 

 

 

Strawberry Salsa

1   cup   Strawberries, diced

1/4 cup   Yellow bell pepper, diced

1/4 cup   Red onion, diced

1/4 cup   Jicama, diced

1/4 cup   Cilantro, minced

2   Tbsp  Lime juice

          Salt & pepper to taste

 

Put all ingredients in a bowl and stir to thoroughly combine.  Use on grilled fish or chicken for a fresh, summer meal.
