Apple Rosemary Salad Dressing

  1                cup  apple cider

  2 1/4   fluid ounces  apple cider vinegar

  1         tablespoon  Dijon mustard

  1         tablespoon  rosemary -- chopped

  7       fluid ounces  salad oil

                        kosher salt -- to taste

                        black pepper -- freshly ground, to taste

 

 

Boil the apple cider until it is reduced to 3 ounces; cool to room temperature.

 

Combine all ingredients except salad oil and mix well.

 

Slowly whisk in the salad oil.
