Caprese Pasta Sauce

     1/2           cup  extra virgin olive oil

  4                     tomatoes -- chopped

     1/2           cup  basil -- thinly sliced

  2             cloves  garlic -- minced

     1/2         pound  fresh mozzarella -- 1/4" to 1/2" diced

  1              pound  pasta shells

 

Mix together the olive oil, tomatoes, basil, garlic and mozzarella.  Let it sit, covered, at room temperature for at least 1 hour so that the flavors meld.

 

Cook pasta according to package directions.  Drain and mix with the sauce.  Serve immediately.
