Cranberry Orange Relish

 

3 C fresh cranberries, rinsed and picked over (12 oz bag)

¾ C sugar

½ C orange juice (juice of 1 large or 2 small oranges)

1/3 C orange liqueur

½ t ground allspice

¼ t ground cloves

¼ t ground ginger

1 T grated orange rind (zest from 1 small orange)

½ C toasted, coarsely chopped walnuts (optional)

 

Combine cranberries, sugar, orange juice, orange liqueur, and spices in a medium non-reactive saucepan and bring to a boil.

 

Reduce the heat to medium low and simmer, stirring frequently, until the cranberries begin to pop and the mixture has thickened slightly, about 10 minutes.

 

Remove from the heat and let cool slightly. Stir in the orange rind and walnuts.

 

Transfer into a container with a tight fitting lid and refrigerate until ready to serve.

 

Serve chilled or at room temperature.
