Mary Ann’s Green Beans

 

2 T. olive oil

1/3 cup pine nuts (optional)*

1 lb. green beans

1 sm. onion, finely chopped

1 garlic clove, minced

juice of 1/2 lemon

salt and pepper

 

*If using pine nuts, heat the oil in a large skillet over med.-high heat, add pine nuts, and cook, stirring constantly and shaking the pan frequently, for 1 minute until light golden brown.  Remove with slotted spoon, drain well on paper towels then transfer to a bowl.

 

Trim green beans.  Put the beans in a pan and pour over boiling water to cover.  Return to boil and cook for 5 minutes or until tender but firm.  Drain well in a colander.

 

Heat oil in skillet over med. heat, add onion and cook stirring frequently for 8 to 10 minutes until softened and beginning to brown.  Add garlic and cook, stirring for an additional 30 seconds.  Add beans to skillet and cook tossing together with the onion for 2-3 minutes until heated through.  Season beans to taste with salt & pepper.

 

Transfer contents to a bowl and sprinkle with lemon juice.

Toss.  Sprinkle with pine nuts if desired.  Serve hot.
