Fresh Tomato & Corn Salsa

makes app 2 Cups

 

3 medium just ripe Tomatoes-a selection of colors is pretty

1/2 C finely chopped onion-this can be sweet, white, red, or a couple of shallots

kernels of 1 ear of cooked corn, roasted or blanched

1 or 2 jalapenos or other hot peppers to taste*

1/4 C chopped fresh cilantro

juice of 1/2 lemon

juice of 1/2 lime

1 t salt or more to taste

1/2 C canned black beans, drained (optional)

 

Chop tomatoes into 1/2" pieces and place in medium mixing bowl. Add onion and corn. Test pepper for spicyness, chop finely and add to tomato mixture. Add cilantro, lemon, lime, and beans (if using) and stir gently. Add salt and stir. Taste for seasoning. Add additional salt or citrus if desired. Serve chilled with tortilla chips or as a condiment with a Mexican menu.

 

*Note- If you're not using a hot pepper, add 1/3 C finely chopped sweet bell pepper for texture and flavor.
