World's Easiest Souffle

  2        Tablespoons  butter

  3        Tablespoons  flour

  1 1/4           cups  whole milk

     1/4      teaspoon  salt

           large pinch  nutmeg -- freshly ground

                        pepper -- freshly ground

  4             ounces  gruyere cheese -- shredded

  3              large  eggs -- lightly beaten

  3        tablespoons  parsley -- finely chopped

 

Preheat the oven to 400.  Lightly grease a 4 cup souffle dish or a 4 cup gratin dish.

 

Melt the butter in a saucepan and add the flour; cook for at least 2 minutes.  Whisk in the milk, bring to a boil, stirring constantly.  Season with the salt, nutmeg, and pepper.  Remove from heat and let cool for a few minutes.

 

Add the cheese, eggs and parsley to the milk mixture.

 

Pour the mixture into the baking dish and bake for 30 to 35 minutes (until the interior temperature reaches 150).

 

Let it set and finish cooking for 10 minutes before serving.

 

Advance Preparation:  Prepare through Step 3 and refrigerate for up to 1 day.  Bring to room temperature before baking.

NOTES : You can vary this dish will all kinds of additions; try sauteed and drained veggies (up to 1/2 cup cooked), ham, bacon, lobster ... use up your left overs!
